Crab Mornay

Approx. 200g crab meat
2 tablespoons butter
2 tablespoons plain white flour
1 cup of milk
1/2 onion
1 clove garlic
freshly ground pepper
1 tablespoon fresh chopped parsley
6 tablespoons of grated Mozzarella cheese

Blue Swimmer Crab meat is available at some supermarkets (near the smoked salmon, oyster and herring department). It is ready to use, sold vacuum packed and very convenient to use.

1. Chop onion, garlic and parsley finely. Place milk, onions, garlic and parsley in a saucepan and heat on a very low heat for 15 mins. This will allow the flavours to intensify. Transfer to a bowl and allow to cool thoroughly. (May be placed in the fridge to chill faster)

2. In a thick based medium saucepan melt butter on a low heat and stir in flour. Cook for 1 min on a low heat. Then add a 1/4 of the milk at a time while constantly stirring. Then bring to a very low simmer for a further 4 mins. Add crab meat and heat through for 1 min. Transfer to serving dish when ready to serve.

At the raclette grill:
Place a spoonful of crab and sauce in a raclette pan . Top with a sprinkle of grated mozzarella cheese. Grill until cheese browns slightly.

Serve with crusty white bread.
