Stuffed Mushrooms with Feta
12 large, firm mushrooms
75g Feta cheese
75g Ricotta cheese
3 tablespoons Romano or parmesan cheese, grated
2 tablespoons of bread crumbs
1 tablespoon dried oregano
½ red onion, finely chopped
½ teaspoon black pepper
Clean the outside of the mushrooms by wiping with a damp paper
towel and remove the stems. In a bowl, add crumbed Feta cheese,
finely chopped onion, oregano and pepper and mix together. Fill
mushrooms with ricotta filling. Mix bread crumbs with the grated
romano or parmesan cheese and sprinkle on top of the filled mushrooms.
At the raclette grill: Place a filled mushroom under the grill
until the tops are crispy.
